Spookey Halloween Pizza
Pizza is a staple for Halloween. I remember as a kid, having to order our pizza for Halloween dinner at 4 in the afternoon so that we could have it before we went out trick-or-treating. Pizza is still a staple in my home as an adult for Halloween, and Anthony absolutely loves that this is a tradition as well. This recipe is basically the same as my recipe for 15-Minute English Muffin Pizzas, the only difference is that I used string cheese to make these pizzas look "spooky" for Halloween. Even if I'm not at school, I like to make Halloween themed food the entire week of Halloween. For more Halloween themed dinner ideas, check out my October school menu here. English muffin pizzas are great! Not only do they make a fun, week night meal, they are a great meal for kids to help out with and even cook up themselves. I like to prepare get all of the ingredients ready by putting all of the ingredients in their own bowls, almost like we do for taco night, and then let Anthony assembly-line it, and make everyone pizzas. Making these pizzas couldn't be easier, and they are even great to make in advance for after-school snacks and quick grab and go dinners. Follow the directions up to the baking part of the pizzas and freeze in a single layer on a baking sheet in the freezer. Once frozen, transfer to a ziplock bag. When ready to re-heat, toss English muffin pizzas in the toaster oven or preheated oven for 10 minutes, and voila - a quick and easy, homemade meal!
Ingredients:
English muffins, split down the center tomato sauce or leftover spaghetti sauce string cheese sliced olives your favorite pizza toppings
Directions:
Preheat oven to 450 degrees.
Split english muffins down the center and toast for about 5 minutes while the oven is preheating, just until they start to brown a little and get crispy.
Place toasted English muffins on a baking sheet lined with parchment paper and add 1-2 tbsp of tomato sauce to each english muffin half. Spread evenly with the back of a spoon.
If you’re using toppings, place them on top of the sauce now. Tear string cheese into strips, and place over pizza toppings and sauce like bandages, making sure to cover the entire English muffin half. Use sliced olives and place as eyes.
Bake for 5 minutes or until the cheese starts to melt. It won’t melt like shredded cheese, but will melt just enough to make a gooey, delicious pizza while keeping the mummy shape.
